Ingredients:

2 cups cooked rice (preferably cooled)

2 tbsp lemon juice (freshly squeezed)

2 tbsp oil (or ghee for richer flavor)

½ tsp mustard seeds

1–2 green chilies, slit
-
1 dried red chili (optional)

1 sprig curry leaves
-
1 tsp ginger, finely chopped (optional)

1 tbsp roasted peanuts or cashews
-
¼ tsp turmeric powder

Salt to taste

Fresh coriander for garnish
Method (7 Easy Steps):

Cook the Rice – Prepare rice, let it cool so the grains stay separate.

Heat Oil – In a pan, add oil (or ghee), and heat it on medium flame.

Add Tempering – Add mustard seeds, let them splutter, then add green chilies, dried red chili, curry leaves, and ginger.

Add Crunch – Toss in peanuts or cashews and sauté until golden.

Season – Add turmeric powder and salt. Mix well.

Add Rice & Lemon – Add the cooked rice, pour lemon juice, and mix gently so every grain is coated.

Finish & Serve – Garnish with fresh coriander and serve warm with papad or pickle.
