Lemon Rice

Ingredients:

  • 2 cups cooked rice (preferably cooled)

  • 2 tbsp lemon juice (freshly squeezed)

  • 2 tbsp oil (or ghee for richer flavor)

  • ½ tsp mustard seeds

  • 1–2 green chilies, slit

  • 1 dried red chili (optional)

  • 1 sprig curry leaves

  • 1 tsp ginger, finely chopped (optional)

  • 1 tbsp roasted peanuts or cashews

  • ¼ tsp turmeric powder

  • Salt to taste

  • Fresh coriander for garnish


Method (7 Easy Steps):

  1. Cook the Rice – Prepare rice, let it cool so the grains stay separate.

  2. Heat Oil – In a pan, add oil (or ghee), and heat it on medium flame.

  3. Add Tempering – Add mustard seeds, let them splutter, then add green chilies, dried red chili, curry leaves, and ginger.

  4. Add Crunch – Toss in peanuts or cashews and sauté until golden.

  5. Season – Add turmeric powder and salt. Mix well.

  6. Add Rice & Lemon – Add the cooked rice, pour lemon juice, and mix gently so every grain is coated.

  7. Finish & Serve – Garnish with fresh coriander and serve warm with papad or pickle.
